Here’s some great recipes we’ve experimented with over the years.  They’re simple, so don’t expect anything fancy here.  Just good, stick-to-the-ribs favorites that you’ll love.

Mermaid BBQ Salad Dressing:

  • 2 tbs. Original Mermaid BBQ Sauce
  • 2 tbs. water

Combine Mermaid BBQ Sauce and water in a small bowl until completely mixed.  Drizzle over salad and enjoy!

Mermaid BBQ Chicken Pizza:

  • 1 ball pizza dough (premade is fine)
  • 1/2 c. Original Mermaid BBQ Sauce plus more for drizzling
  • 1 fully-cooked, diced chicken breast
  • 1 c. shredded colby jack cheese
  • 1/c. shredded low moisture mozzarella cheese
  • 1/4  c. red onion, thinly sliced and chopped (vidalia is fine)
  • 4 pieces crumbled or chopped cooked bacon
  • cornmeal for dusting

Prepare pizza dough to your recipe’s instructions.  Preheat your oven with the pizza stone or air bake pizza pan inside.  After rolling out the dough, remove stone or pan from oven and sprinkle with corn meal.  Transfer dough to stone or pan and reshape.  Using a fork, poke holes in the dough to avoid bubbles while cooking (or not, if you like bubbles).  Place back in the oven for 2 minutes.  Remove stone from oven and spread the BBQ Sauce over the dough leaving 1″ of uncovered crust on outer edge.  Sprinkle the colby jack cheese over the sauce.  Then top with the chicken, bacon and red onion and sprinkle the mozzarella over the toppings.  Using a spoon, drizzle ribbons of Mermaid BBQ Sauce over the pizza.  Put the stone back in the oven and bake until the cheese is melted and bubbling.

Unloaded Baked Potatoes:

  • 4 russet potatoes, washed
  • 1 c. sour cream
  • 1/2 c. Original Mermaid BBQ Sauce
  • 1 piece of bacon
  • any seasoning blend (just salt and pepper works, too)
  • chives
  • olive oil

Parboil the potatoes in a large pot of water.  Drain and let cool.  Slice potatoes into wedges and place onto a baking sheet.  Using an oil mister or brush, baste wedges with oil.  Shake on your favorite seasoning blend (ie. Old Bay, Lemon Pepper, Mrs. Dash, Adobo, or even just salt and pepper).  Bake on the sheet in a 350 degree preheated oven OR grill directly over medium to low heat until the wedges have browned.   While wedges are cooking, mix sour cream and Mermaid BBQ Sauce together until well blended.  Chop chives and bacon then sprinkle over sour cream mixture.  Serve wedges with the sour cream dipping sauce on the side.
